Chickpea Quinoa Salad with Balsamic Dressing

1 15-ounce can chickpeas, drained

1-1/2 cups cooked quinoa, cooled

1-1/2 cups small cherry tomatoes

1 cup of cucumber, cut in small chunks

1/2 cup diced red onion

Dressing: Combine 2 tbsp. olive oil, 2 tbsp balsamic vinegar, 1/2 tsp. salt, and 2 tsp. honey.

Combine salad ingredients and toss with dressing. Chill for 30 minutes. Serve on a bed of mixed spring greens. Garnish with feta cheese if desired.
